
Ingredients:
For the Protein:
• 1 lb large shrimp (peeled and deveined)
• 6 oz andouille or smoked sausage (thinly sliced)
For the Pasta:
• 10 oz fettuccine pasta (or your favorite pasta)
For the Sauce & Veggies:
• 2 tbsp olive oil
• ½ yellow onion (thinly sliced)
• 1 red bell pepper (thinly sliced)
• 3 cloves garlic (minced)
• 1 tsp Cajun seasoning (or Creole seasoning)
• ½ tsp dried oregano
• ½ cup crushed tomatoes
• 1 cup chicken stock
• 1 cup heavy cream
• ½ cup grated Parmesan cheese
For Seasoning:
• Kosher salt and fresh black pepper (to taste)
Instructions:
1. Prepare the Shrimp:
• Season the shrimp with Cajun seasoning, oregano, salt, and pepper. Heat 1 tbsp olive oil in a large skillet over medium heat.
• Sauté the shrimp until pink and slightly browned (about 2–3 minutes per side). Remove from the skillet and set aside.
2. Cook the Sausage:
• In the same skillet, add another tbsp of olive oil and sauté the sliced sausage until browned. Remove and set aside.
3. Sauté the Veggies:
• Add the onions, bell peppers, and garlic to the skillet. Cook until softened and fragrant (about 5 minutes).
4. Make the Sauce:
• Stir in crushed tomatoes, chicken stock, and heavy cream. Bring to a gentle simmer. Add Parmesan cheese and stir until smooth. Adjust seasoning with more Cajun spice, salt, or pepper as needed.
5. Combine Everything:
• While the sauce simmers, cook the pasta according to package instructions. Drain and toss it into the skillet with the sauce.
• Add the cooked shrimp and sausage back to the pan and mix well. Allow everything to heat through for 2–3 minutes.
6. Serve:
• Garnish with additional Parmesan or fresh parsley if desired. Serve hot and enjoy this creamy, spicy pasta dish!
